From Dirt To Dinner: Beets
Darryl is one of those people who likes pretty much anything. Liver- yep, brussel sprouts- yep, tomotoes- yep, curry- yep, cilantro- yep. But the one food he is not so fond of it is beets. Whereas I love beets. One time I ate so many of them it turned my pee turned purple. So last year we grew a pretty good crop of beets. I pickled almost all of them. We ate a few after boiling them, but didn't do anything creative.
To pickle beets, you boil them so you can get the skins off. The slice them up and add a vinegar/water/pickling spice solution to them. It is really quite easy. This year we didn't grow any beets as we still have some left from last year.

Oh, they're so pretty! I'm fairly certain I'll be trying to can some this year as well - we just get so much from our CSA I can hardly keep up with them. Do you use a specific recipe for the amounts in the solution? Or do you just sort of "know"?
I tried to grow some beets last year and it just really didn't work out. They never got very big for some reason:(
I'm having a totally childish giggle over the purple pee. I don't like beets either but I'd almost wanna try for that reason :p
Yum, I LOVE beets, but Tino never eats them. I love them peeled and then baked in the oven with olive oil, salt and pepper! Your pickled beets look amazing.
